You can change the name of the app through the Partner Dashboard:
https://app.shopify.com/services/partners/api_clients
Click on the app's name, then App Settings. Enter a new name, save it and then click on "Edit App Store listing" and save the App Store listing. The new name should appear on the public App Store page.
