Shopify does provide URL redirects: 

URL redirects prevent bookmarks and links to your previous site from breaking

You can use this to redirect for example /news to /blogs/news.

Also you are free to define the URL-handle of Shopify objects like products and collections (the {product-name} part). But otherwise you can't modify the structure.
